In the world of alcohol, I remember a long time ago, when I was a child, there were things like special grade and first grade sake made by major manufacturers in accordance with standards set by the government, and second grade sake made by responsible local sake breweries.
I believe that system is no longer in place, but if, for example, Dassai or other well-known sake breweries were to claim that they met the national standards, people would probably think "what on earth happened??"
There was a passage in Oishinbo a long time ago that said, "The very act of calling it 'junmai sake' is truly embarrassing. This term is used because there is sake made with industrial ethanol.
